Eliza's
Named after the wife of Captain Fraser who, together with her husband, was shipwrecked on Fraser Island in the early 19th century, Eliza’s features classic high ceilings with exposed rafters and floor to ceiling French windows, overlooking the tranquil water feature and gardens. The restaurant is ideal for private functions and is a popular wedding reception venue.
Chef de Cuisine Gareth Collins has an established reputation amongst Sunshine Coast restauranteurs and came to Hyatt Regency Coolum with experience from England, Wales and the Pacific Islands.
Gareth has drawn upon his international knowledge to create an eclectic array of dishes and flavours, crafted from local produce. Favourite ingredients from regional suppliers include Bendelle Farm duck, Gympie hand-picked beans, Byron Bay pork belly, Mooloolaba king prawns and Hervey Bay scallops, complemented by an award-winning wine list.
Eliza’s wine list was awarded two glasses in the Australian Wine List of the Year 2010 and 2011 Awards by Gourmet Traveller Wine Magazine.
A selection of simple yet well executed dishes, together with Gareth’s exciting creations, will serve to satisfy the most sophisticated of palates.

The McKenzie Grill
A popular dining venue for locals, as well as private functions and weddings, The McKenzie Grill features a backdrop of delicious aromas and lively ambience from the open kitchen. The restaurant also offers beautiful daytime views of the golf course and lakes during a daily lunch service and High Tea on Saturdays
Leading the live cooking action is chef Cemil Dalyan, who honed his skills at Grand Hyatt Dubai’s famed Manhattan Grill restaurant, blending together French, Asian, American, Italian, Arabic and Turkish influences before being lured to Coolum.
Together with Executive Chef Jan van Dyk, Cemil has breathed new life into old menu favourites to produce mouth-watering dishes such as hand cut angus beef tartare, lobster thermidor, Noosa spanner crab, and Australian Wagyu beef from the grill as the signature dish.
The McKenzie Grill’s wine list was awarded one glass in the Australian Wine List of the Year 2011 Awards by Gourmet Traveller Magazine.

The Village Square
Bruschetta
Guests can dine inside the restaurant, or enjoy al fresco dining on the terrace overlooking the pool.
Fresh and interesting salads are a distinctive feature of the menu, with sugar and vodka cured salmon, spinach and lemon risotto with Moreton Bay bugs, and Eumundi smoke house duck breast given starring roles by chef Wayne Mackie. A special kids’ menu including spaghetti, chicken and mushroom risotto, and fish and chips is also available.
Bruschetta was the winner for Best Restaurant in a Resort in the 2010 Savour Restaurant & Catering Queensland Sunshine Coast Awards for Excellence, and the restaurant’s wine list was awarded one glass in the Australian Wine List of the Year 2010 and 2011 Awards by Gourmet Traveller Wine Magazine.
